Tropical Delight

3-4 pineapple chunks
1 ounce of coconut rum
1 ounce of simple syrup
3 ounces Ballatore Gran Spumante
Pineapple wedge for garnish

In cocktail shaker, muddle the pineapple chunks with the coconut rum and simple syrup. Add ice and shake vigorously. Strain into champagne flute and top off with Ballatore. Garnish with pineapple wedge.
